tell me if it would be a problem if I covered my head (which I always do anyways because I don't want my face to look like I am 60 years old when I'm only 30), with 2 towels.

ya, you are good to go with covering your head area before and after surgery. But in most peoples case, wait till after surgery, till your donor and recipient area are back to normal skin color. If you are going to full out tan without covering.
