Here is what I did to ensure a safe and secure future for my grafts:

I didn't wash my hair until day 6, and even then I did NOT touch the recipient area and used a weak stream of water. At day 10 is when I used a shower and began to lightly rub the scabs to get them off.

How long after a transplant are the FU's really secure in the scalp. I heard after 5 days. Any medical studies on this?

That's a good question. Like you, I was very careful, adding a day or so to my doctor's instructions for waiting to wash, etc. Better to error on the conservative side! Incidently, my doctor's instructions allow for resuming normal activities after 7 days, the only restriction being to limit sun exposure as much as possible.
